Mint-Cilantro Chutney Paratha/Bread
Paratha is layers of cooked dough, pan-fried with ghee or oil. Back in India, you will find hundreds of versions of paratha, literally. You name any ingredient and there will be an existing paratha using the same ingredient.
Usually, Paratha can be made in two ways - stuffing the dough while rolling or mixing the ingredients with flour while kneading the dough. To make things easier I made a paste of cilantro, mint, ginger, garlic, pepper, salt, basically a green chutney, and mixed this chutney with flour while kneading the dough. I think I am just gonna call this Chutney Paratha!!!

Ingredients
- Whole wheat flour, 2 cups
- Cilantro, 1/2 cup
- Mint, 1/2 cup
- Green chilli (Serrano, Thai or Jalapeno), 1
- Ginger, 1 small knob
- Garlic, 2 cloves
- Cumin, 1/4 Tsp
- Celery seeds/Ajwain, 1/4 Tsp
- Turmeric, 1/4 Tsp
- Asafoetida/Hing, one pinch
- Salt to taste
- Oil/Ghee as needed
- Water as needed
Directions
- In a food processor, add mint, cilantro, green chilli, ginger, garlic, little water (around 1/4 cup) and make a chutney-like puree.
- In a large mixing bowl add flour, salt, celery seeds, cumin, asafoetida, turmeric, cilantro-mint chutney and knead to a soft dough. Brush some ghee/oil on all sides of the dough, cover and let it rest for 30 minutes.
- After 30 minutes, knead lightly and make equal size balls of the dough.
- Roll a ball into a small circle using a rolling pin. Brush the rolled dough with some ghee or oil and fold it into a semicircle and then once again into a triangle. Rolled the dough to the desired size with an even thickness, using a rolling pin.
- Heat griddle or a frying pan. Put little ghee/oil and spread it on the pan. Put rolled bread carefully in the pan and cook on the medium high flame until golden brown.
- While the other side is cooking, using a spoon spread some ghee/oil on the side facing you.Flip and cook the other side until golden brown.
- Repeat the process for all the rolled balls of dough.
- Serve hot with chai or a side dish.
